This recipe is for Paleo Power Bars with Goji Berries, Blue Berries and Blackberries. I know there is some discussion regarding coconut sugar... is it Paleo.
I am relatively new to the Paleo diet, therefore I am not an expert on
the subject. Coconut sugar is made from the flower of the coconut, so
its a natural sugar.
From what I've read the true (dedicated) Paleo dieters say no to all sugar, so maybe the coconut sugar shouldn't be used. I'm beginning to think that a lot what is written about the primal foods is somewhat subjective.
At any rate, what I was looking for and made are Paleo Power Bars. My wife and I were tired of all the heavily sugar laden bars that are on the market.
Let's face it, the food we eat that has been commercially produced with the first ingredient being sugar or rolled oats... is crap.
The Paleo Power Bars are a healthy choice for snacking, power boosting or simply an after workout chewy bar.
Ingredients:
1 1/2 cups blanched almond flour
1 1/2 tablespoon coconut flour
3 tablespoons flax meal
1/2 teaspoon sea salt
1 teaspoon baking soda
3 tablespoons coconut sugar
3 eggs
3/4 cup goji berries, soaked in 1/2 cup boiling water to plump
1 cup frozen blueberries
1/2 cup frozen blackberries
1/4 cup 85% cacao (dark chocolate) chopped into chip size pieces
Directions:
In a large bowl, combine almond flour, coconut flour, flax meal, salt and baking soda.
Blend in coconut sugar and eggs with a hand blender.
Mix in gojis (drain first), blueberries, blackberries and chocolate with a large spoon.
Spread mixture into an 8 x 12 inch baking dish, it will be about an inch thick.
Bake at 350° for about 45 minutes (the original recipe didn't have the blueberries or blackberries and I changed other proportions. I cooked the bars until the mixture started to look dry in the center.
Cut into squares and serve.
