Why does my moose roast have a mushy consistency after cooking it?

I can't say that I can answer that without knowing:
1) What cut it was.
2) How close to the area the animal was shot was the roast taken from.
3) What your cooking method was.
You say it's mushy, so I will assume you cooked it in a slow cooker and it was likely over cooked. Or you were using a dull knife to cut the roast that was cooked in a slow cooker.
I will often use an electric knife to carve roast done in a slow cooker so they don't fall apart.
