I've not been on your site before, but always interested in anything to do with moose, elk, deer, etc.
A great recipe you might be interested in trying out is -
Take a moose roast, stuff with chopped garlic cloves, add 1/2 cup flavored Olive Oil (I use either Garlic, Basil, Tuscan Herb, any kind; then pour over about 1/2 to 3/4 cup Maple Syrup (I get fresh Maple Syrup from Quebec, Canada; then I generously sprinkle Montreal Steak Seasoning, Basil, Chives, Parsley over top & also into the liquid; add chopped onions.
Add about 1/2 cup water & roast at 350F (uncovered) approx. 1 1/2 hrs for avg. size roast. About 1/2 hr before it's done, I mix Knorr's Hunter Sauce & 4 Peppercorn Sauce & add to the liquid in the pan.
I have lived with an avid hunter for over 20 years & our freezers are stocked with moose, elk, deer, wild goose (be they steak, roast, sausage, ground meat, sausages, pepperettes.
AND - I make a pretty mean stew made from wild goose legs !
